Vegan Lobster Roll

THE GOODS:
1 Can of Heart Of Palm
4 tablespoons vegan butter
4 split-top Brioche or Gluten Free buns

THE DRESSING:
¼ cup Vegan Mayonnaise
1 tablespoon minced Chives
1 tablespoon Lemon Juice
1 tablespoon Old Bay Seasoning
¼ Paprika
¼ teaspoon Kosher Salt
¼ teaspoon freshly ground black pepper
THE HOW:
Chop the Hearts of Palm into chunks.
Add all the dressing ingredients in a separate bowl
Stir to combine.
Add the chopped hearts of palm.
Gently mix.
Butter the rolls, then toast on a griddle pan, outdoor grill or toast them in a toaster over.
Fill the rolls with the delicious hearts of palm, top with chives and a little paprika.
Enjoy!
