Vegan Lobster Roll

THE GOODS:

  • 1 Can of Heart Of Palm

  • 4 tablespoons vegan butter

  • 4 split-top Brioche or Gluten Free buns


THE DRESSING:

  • ¼ cup Vegan Mayonnaise

  • 1 tablespoon minced Chives

  • 1 tablespoon Lemon Juice

  • 1 tablespoon Old Bay Seasoning

  • ¼ Paprika

  • ¼ teaspoon Kosher Salt

  • ¼ teaspoon freshly ground black pepper


THE HOW:

  1. Chop the Hearts of Palm into chunks.

  2. Add all the dressing ingredients in a separate bowl

  3. Stir to combine.

  4. Add the chopped hearts of palm.

  5. Gently mix.

  6. Butter the rolls, then toast on a griddle pan, outdoor grill or toast them in a toaster over.

  7. Fill the rolls with the delicious hearts of palm, top with chives and a little paprika.

  8. Enjoy!
