Vegan Gluten-Free Paleo Banana Bread

Whenever the cold weather arrives I always crave warm baked goods. I learned a trick to substitute eggs with chia seeds and I must say it's my new favorite gluten-free vegan banana bread. Try it and let me know how you like it.


THE GOODS:

• 2 cups almond flour

• 2 tbsp monk fruit powder

• 1 tsp baking soda

• 1 tsp cinnamon

• 1/4 tsp sea salt

• 2 large overripe bananas, mashed

• 2 chia eggs (6 tbsp chia seed + 3 tbsp water)

• 1/2 cup coconut oil

• 1 tsp vanilla extract



THE HOW:

1) Preheat oven to 350

2) Combine all ingredients together in a bowl.

3) Bake for 40-50 minutes
