Italian Chicken Sausage Tortellini Soup

Italian Chicken Sausage Tortellini Soup is a comfort food in a bowl! It’s loaded with fresh veggies, hearty Italian chicken sausage, pillowy tortellini, and in a creamy tomato broth. A quick and cozy dinner you'll love.


Baby it's cold outside, so this is the perfect cozy meal to warm up with. This quick 20 minute soup if full of vitamins and nutrients from the carrots, kale and spinach, savory Italian Chicken Sausage.


Ingredients

▢ 2 tablespoons Extra Virgin Olive Oil

▢ 1 white onion, chopped

▢ 4 medium carrots, peeled and sliced into rounds

▢ 2 garlic cloves, minced

▢ 2 Italian Chicken Sausage links, mild or hot

▢ 1 15-ounce jar of Vodka tomato sauce

▢ 3 cups low-sodium vegetable or chicken broth

▢ 2 teaspoons Italian seasoning

▢ 9 ounces Spinach Stuffed Tortellini

▢ 3 cups Chopped Kale and Spinach

▢ ½ cup Oat Milk at room temperature

▢ Grated Parmesan cheese, to taste (optional)


How to Make Italian Chicken Sausage Tortellini Soup

This creamy Italian Chicken Sausage Tortellini Soup is so easy to make in a single pot.

  1. Sauté the vegetables. Warm 2 tablespoons of olive oil in a medium heavy pot or dutch oven over medium-high heat. Then, add in the chopped onions, diced carrots, and minced garlic, and cook until the veggies are soft and the garlic is fragrant. This will take about 5 minutes.

  2. Cook the sausage. Add the sausage to the pot, cooking for about 5 minutes or until it is browned and heated through. Once the meat is fully cooked, drain any excess fat.

  3. Add the broth, seasonings, tortellini, and more. In the same pot, stir in the tomato sauce, broth (I used chicken broth), and Italian seasoning. Bring the ingredients to a boil, and add the tortellini pasta. Cook the pasta according to the package instructions, and stir in the kale and spinach leaves before turning off the heat.

  4. Thicken the soup. Slowly stir Oat Milk into the soup.

  5. Garnish and serve. Portion your sausage tortellini soup into serving bowls, and garnish with Parmesan cheese. Serve and enjoy!
